This limited edition bottling of AULTMORE 12 Year Old is finished in second-fill Oloroso casks. Replete with its characteristic floral and fruity notes, the finish delicately​ imbues the malt with sweetness and spice. It is elegant and delicate; a fragrant array of floral meadows and summer fruits accompany soft creamy toffee notes with hints of cinnamon delicately lingering in the finish.​ As well as being interested in different finishing cask​ types for this collection Stephanie was also intrigued by the impact of second-fill casks versus first-fill casks. This is demonstrated in the collection’s 12- and 25-year-old expressions.​ These second-fill Oloroso casks which once held Oloroso sherry and then used for maturing whisky, have been used for a second time to finish AULTMORE 12 Years Old. The casks give a distinctive influence on the finishing whisky which is not as dominant as from first-fill casks. With a lighter, ethereal whisky like AULTMORE, second-fill cask delicately compliment the whisky’s nuanced character.
